I am unable to override delivery method when I edit a student's schedule. I have updated some classes delivery method, namely by removing the assigned delivery method so that it is blank, but that method is still appearing in the student's schedule. I am unable to override these in their schedule within their schedule profile. Our A section classes should not be "residential" but they are showing up as so.

I believe I have answers to all of your questions. Please let me know if you still have questions.
There is an option in CLASSES (top menu in Academics to manage classes), when you go to Class detail. The option is "Allow Enrollment with Different Delivery Method". If this is checked for the class then you can override the delivery method in the student schedule class details.
I did some checking and it appears if you change the delivery method for a specific class it does remove that delivery method from the schedule display on a student. The only thing I can think of as to why it would not change for you is that the specific class the student is enrolled in is different from the class instance that you updated the delivery method. If you can email me directly the student and class I would be happy to look into it.
See above explanation. This should allow you to override after opening the option to override in the class.
Once you have saved the changes for the A section classes so that they do not have residential selected, when you copy the class for a new year/term it should maintain the delivery method and other options. This should not be an issue for future years.
Lastly, if you would rather not have classes with blank delivery methods you could have a delivery method that is a catch-all like "professor-student arrangement". The benefit of this is it allows you to distinguish between classes that are blank and need a delivery method assigned and those that do not fit the normal delivery methods.
